Maple Butter Breakfast Sweet Potato

This delicious breakfast sweet potato is a great option for your morning if you are looking for something quick, easy, and healthy. 


1 Sweet Potato

Your favorite granola

Strawberries & Blueberries (or any fruit of your choice)

Maple Butter


1. Preheat oven to 400 F. Wash and dry sweet potato. Pierce potato 2-3 times with fork. Once oven reaches temp, place sweet potato in oven for 45 minutes or until soft. 

2. Take sweet potato out of oven and let cool for ~5 minutes. 

3. Once cool, cut open sweet potato and load up with your favorite granola and fruit. 

4. Drizzle with Maple Butter. 

5. Enjoy! 

Tip: Bake a couple of sweet potatoes over the weekend to use throughout the week. That way, all you have to do is whip one out of the fridge and load it up in the morning!
