These yummy bites are delicious & easy for a breakfast on the go and I can't wait to share them with you! This recipe is from the amazing Lindsay Cotter from Cottar Crunch. Link to original recipe can be found below.
1/4 cup finely chopped nuts
2/3 cup almond meal or coconut flour
1/2 cup nut butter
1- 2 tbsp ground coffee
1/3 cup Vanilla bean Protein of choice (extra for coating)
1/3 cup Real Maple Syrup
1. Chop your nuts of choice finely (easiest to do this in a food processor) until they resemble something close to a powder.
2. Mix the nuts in a bowl with the ground coffee, nut butter, vanilla protein, almond meal, and lastly, the Real Maple Syrup. Once mixed completely, roll the mix into balls.
3. Please balls on a baking sheet and coat with the extra protein powder and/or coffee.
P.S. To keep them fresh, keep refrigerated.
